Our backpacking adventure continues as we head to Taiwan; famous for its tea plantations with some of the finest oolongs in the world being cultivated here. The most prized of these is Oriental Beauty Oolong, as named by Queen Elizabeth II after she was so impressed by its distinctive taste. The flavour profile is fruity, with floral, wild honey and tart notes.

We have balanced the oolong tea flavours with zesty Kumquat, floral Hibiscus and aromatic Ginseng, harnessing the best natural produce that Taiwan is famous for.

Taipei Old Tom is a refreshingly fruity gin with a restrained hint of sweetness; light tea aromas lead to floral notes and herbal complexity.

INGREDIENTS

50ml Tarsier Taipei Old Tom

20ml Fresh Lemon Juice

15ml Honey

1 tbsp Peach Flesh

Soda Water

 

GLASS: Wine Glass

GARNISH: Peach Slices

METHOD

1. Add all ingredients in a cocktail shaker with ice.

2. Shake until well chilled.

3. Strain into wine glass with ice.

4. Top with soda water.

5. Garnish with peach fan (3 peach slices on a cocktail stick).

OOLONG-ING FOR SMOKE

INGREDIENTS

60ml Tarsier Taipei Old Tom

20ml Lapsang Souchong Tea

20ml Fresh Lemon Juice

10ml Sugar Syrup (2:1)

2 tsp Orange Marmalade

 

GLASS: Rocks Glass

GARNISH: Orange Peel, Tea Leaves

METHOD

1. Stir marmalade and gin in the base of a shaker until dissolved.

2. Add other ingredients with ice.

3. Shake and double strain into a rocks glass with a large cube of ice.

4. Garnish with an orange peel fan and loose tea leaves.

TAIPEI PEAR SOUR

INGREDIENTS

50ml Tarsier Taipei Old Tom

20ml Fresh Lemon Juice

10ml Simple Syrup (2:1)

1 tbsp Pear Flesh

1 Fresh Egg White

 

GLASS: Coupe Glass

GARNISH: Pear Slice, 3 drops of Eucalyptus Bitters (or Angostura Bitters)

METHOD

1. Add all ingredients into a cocktail shaker full of ice.

2. Shake hard to break up the pear and foam the egg white.

3. Strain into a coupe glass with ice.

4. Garnish with a slice of pear and add 3 drops of bitters on top.

YUAN YEUNG MARTINI

INGREDIENTS

30ml Tarsier Taipei Old Tom

30ml Coffee Liqueur

30ml Cold Espresso

15ml Evaporated Milk

 

GLASS: Coupe Glass

GARNISH: Coffee Beans, Shortbread

METHOD

1. Add all ingredients into shaker with ice.

2. Shake hard to foam coffee.

3. Double strain into chilled coupe glass.

4. Garnish with coffee beans and serve with shortbread on the side.
